I’ve been reworking recipes for years to make them safe for my little men. Their list of allergens has changed quite a bit since we first began our food allergy journey, but one thing has remained the same – our love and affinity for all things SunButter!
Over the past few years, I’ve made Chewy SunButter Cookies, Muddy Buddies, SunButter Soup, SunButter Frosting…the list goes on and on. Recently, I’ve been craving a good creamy peanut butter pie. Of course, that won’t fly in this house. I improvised and came up with this beauty! My little men were unsure at first, mainly because I called it a pie! LOL! After I convinced them to give it a try, it didn’t last long. Soon their mouths were covered in SunButter and chocolate.
I love this pie for many reasons, the first being…obviously, it contains SunButter (top 8 allergen free). The second is the fact that I don’t have to bake this pie. I can have the entire pie assembled and ready to eat in 30-minutes or less. It’s better if it’s had time to chill for a couple hours in the fridge, but if you’re in a hurry this one can definitely be consumed immediately.
This would be a perfect pie to take to your holiday gatherings. I did use Oreos to make this dessert. However, if you need to make it gluten-free, you could use KinniToos Gluten Free Chocolate Sandwich Cookies. These have a “may contain egg” warning on the back, so we don’t eat them.
