It’s finally getting cold here and when that happens I start baking like a crazy person. Why? That’s a great question. I think it’s because once the cold temps settle in, I’m a walking icicle. So I’ll do anything to warm up. Plus, who doesn’t love a warm baked good on a cold day???
I’m always looking for ways to get some extra protein into my little men, especially in the morning. When I was younger, peanut butter was an easy protein source for me. Although my little men can now have peanut butter, they still prefer the taste of SunButter. Luckily SunButter contains 7g protein per serving – the same protein content as peanut butter!! WOOHOO!
On one of my baking days, I came up with this yummy bread. Of course, you could totally make it without the chocolate chips, but why would you?!?!?!
I used Enjoy Life Chocolate Chips and Creamy SunButter. This recipe could easily be made with a gluten-free flour blend for those avoiding gluten. My favorite is Better Batter or Namaste. Another fun idea would be to make this bread with the Natural Crunch SunButter to give it that extra something! Hmmm…maybe I’ll make that next time!
This bread is great sliced as is, but I prefer it toasted with some butter, slightly melted, on top. If you really need to up your protein or just really LOVE SunButter, try toasting it and slathering some SunButter on top! You’re welcome!
