I LOVE breakfast food! I always have and honestly, it’s probably one of the biggest challenges for me as a food allergy mom. Between my two little men, I can’t cook with eggs or dairy (amongst other allergens). But since many breakfast foods contain one or both of these items you can see where the challenge comes in – especially with having to omit eggs.
Just think, that omits all baked goods, all egg casseroles, quiches, pancakes, french toast, waffles, and of course your basic scrambled egg or omelet. Man, that really kills the breakfast options! Of course they can have some cereals, oatmeal and other baked goods and pancakes if I make them with substitutes. They don’t know it any other way but, it still makes me sad that they can’t enjoy all of the goodness that comes from the incredible, edible egg!
Over the past couple years I’ve found ways to recreate certain recipes so that they can enjoy some breakfast foods. I bake them bread each week so that they can have toast. I’ve reworked our pancake and waffle recipe and I’ve even reworked our cinnamon roll recipe but the original recipe, although delicious, takes forever to make and I’m SO not a morning person. However, this new recipe is one that can go from fridge, to oven, to table in roughly 30-minutes. Now, that’s what I’m talking about!
Now, if you are looking for a gluten-free recipe then you’ll be out of luck with this one. But have no fear, I will post my other recipe (the long one) soon and that one is gluten-free.
So, do you want to know what the secret is to making these bad boys?!?!? It’s the new Pillsbury® Crescent Recipe Creations Seamless Dough Sheet. Did you just hear the angels sing, “Hallelujah!” You can read all about their ingredient list and allergy information, here. We’ve been eating the Pillsbury® Original Crescent Rolls since my youngest passed his soy food challenge in January with no problems. But as always, do you own research as each child’s allergies and thresholds are different.
This recipe is free of: dairy, egg, peanuts, tree nuts, fish, shellfish and sesame.
**also possibly soy-free depending on your stance on soybean oil – we avoided it
like the plague when my youngest still had his soy allergy, but many consume it
fine**
For the Rolls:
- 2 Packages of Pillsbury® Crescent Recipe Creations Seamless Dough Sheet
- 3 TBS. Butter, Melted (We use Earth Balance, dairy & soy free)
- Sugar
- Cinnamon
For the Icing:
- 1 lb. Powdered Sugar
- ¼ Cup Milk (We use soy but rice or hemp could also be substituted)
- 3 TBS Butter, Melted (We use Earth Balance, dairy & soy free)
- 1½ tsp. Maple Syrup
- 1 TBS Strongly Brewed Coffee (optional)
For the Rolls:
- Preheat the oven to 375.
- Roll out the dough sheet, 1 at a time, on a floured surface or piece of parchment paper.
- Brush with melted butter and sprinkle with cinnamon and sugar.
- Roll the dough tightly from one end to the other - be careful to keep the roll tight.
- When you reach the end, pinch the seam together.
- Transfer to a cutting board and cut 1½ to 2 inch slices.
- Repeat with second sheet of dough.
- Grease the inside of a round pie pan or baking dish. (I use Spectrum Shortening but you could also use butter.)
- Place the sliced rolls in the pan, slightly touching each other until the pan is filled.
- Bake for 15-20 minutes, until the rolls are golden brown. Just check to be sure the center rolls are done.
For the Icing:
- In a large bowl mix together the butter, powdered sugar, milk, syrup, and coffee (optional).
- Mix until smooth. You can add more ingredients until you reach the desired consistency. If too runny, add more powdered sugar. If too stiff, add more milk or butter.
- While the rolls are still warm, generously pour the icing over he top. Be sure to get the edges.
- As they sit, the rolls will absorb some of the icing...YUMMO!
**Allergy Alert**
Be sure to read all of your labels. I have found many spices and other products (i.e. garlic powder) that include additional ingredients like soy.
Known Allergy Information (containing the major 8): Wheat
**Disclaimer: Please note that every child’s sensitivity to their given allergen(s) varies. Some of the items that I use do contain “natural flavoring” and “spices” which is hard to determine if it is 100% allergy free. You should always check with the manufacturer to confirm that your child can have their product(s). The products that I list are items that I’ve been using for awhile and have proven to be safe for my boys (their allergies are dairy, soy, egg, peanut, tree nut, fish, shellfish and sesame).**
